tabouli

Ingredients:

  • 1 cup Bulgur
  • 1.5 cups Water
  • 2 tbs Chicken stock powder
  • Dried mint
  • Frozen peas
  • 2 Roasted peppers (from a jar)
  • Feta cheese
  • 1 Chopped spring onion
  • Sultanas
  • Chopped deseeded cucumber
  • 1.5 tbs lemon juice

Prepare the bulgur by boiling the water and adding the chicken stock powder, dried mint, frozen peas and bulgur. Turn off the gas and cover your pan. Leave this for 15 minutes.

Prepare the rest of the ingredients, chop the roasted peppers, spring onions and cucumber. To finish the dish add everything together et voila, yummy fresh tabouli.

Not claiming this to be an authentic dish, it’s our take on a carby salad. Just add anything you like to taste. Other versions have included: roasted cashews, chick peas, semi-dried tomatoes and roasted aubergine.
