My Onion Bhaji
I tried this recipe before. I thought it was a bit bland, but I did make my own twist to it. Like I don’t use coriander/cilantro because it’s the herb from hell. Also winged it a bit on the spices, because I don’t have em all.
Then yesterday I saw another recipe on Indian Food Made Easy. So now I tried my own version with some plain flour added and yoghurt. At the time when I made this, the recipe wasn’t yet published. I’ll try the one on the BBC site next time.

My version has:
- 200 gr gram flour
- 100 gr plain flour
- 1/2 tsp baking powder
- about a cup of yoghurt
- 1 spring onion
- paprika powder
- curry powder
- pinch of salt
- couple of turns of pepper
- some water
Mix the dry ingrediënts without the onion, add yoghurt and water, till you get a batter that is not too thin (wetter than bread dough, dryer than pancake batter). Add onions. For frying I used a small saucepan with about 5cm of oil. Heat till about 170/180C and fry spoonfuls of batter for about 3 minutes.
I like to eat it with some chili sauce.
